Fruit is hand harvested in the morning to keep it cool, which is central to the nuevo style of this wine, quick and bright and made to drink young. Fermentation starts in small open-top bins, and five days in it goes through the basket press into tank to finish. Nothing goes in except a small amount of sulphur at bottling, and there is no fining and no filtration. It is the house red of the range.\u003c\/p\u003e\n\u003cp\u003eCrunchy red and black fruit, cracked pepper and a saline finish, with tannin kept right out of the way. Serve it cool, 13 to 14 degrees, straight from twenty minutes in the fridge.
