Whole bunches were tipped into the bottom half, then the rest of the crop was destemmed and poured on top, so the base of the ferment works semi-carbonically while the top behaves like a conventional red. Ten days on skins was enough, after which the wine was pressed to tank to finish fermenting and go through malolactic, then racked and bottled. All the Shiraz is hand harvested from the organic blocks at Yungarra, on the ridge above Yallingup. The result has more punch than earlier releases without losing the style.\u003c\/p\u003e\n\u003cp\u003eJuicy and peppery, with blood plum, dried herbs and a lick of salt, tannins soft and the finish clean. Serve at 14 to 15 degrees, lightly chilled.
