The site is steep slate, a little warmer and earlier than the Scharzhofberg, and it has long had its own following. Kabinett is the lightest rung of the German ripeness ladder, picked earliest, whole-bunch pressed and fermented slowly in old wooden Fuder with the cellar's ambient yeasts.
