Earlier releases came from Sanlúcar; for No. 117 the team travelled inland to Montilla-Moriles, drawn by the chance to bottle a spectacularly fine and lively amontillado. The wine comes from Altos de Moriles and from the venerable bodega of Pérez Barquero, and is made from Pedro Ximénez, the workhorse variety of Montilla, rather than Palomino. It began life as a fino under a veil of flor, passed its first oxidative stage in a cellar at Lucena, then completed ageing at Pérez Barquero. In the Montilla tradition it has never been fortified: natural alcohol sits below 18 per cent, which keeps it fluid and fresh despite two decades of oxidative maturation.
