For their version, Eduardo Ojeda and Jesús Barquín chose a five-year-old Oloroso from a prestigious Jerez bodega as the base wine. Into it Ojeda steeps a blend of botanicals including wormwood, coriander, liquorice, elderflower, juniper, bitter orange peel and grapefruit peel, all of which grow wild in the fields and mountains of Andalucía. This is a small-batch, artisanal release bottled at 17.5 per cent.
