This release comes from a solera of nine butts labelled Viejo Cream, which had never been sold commercially beyond a few sacas for the British market, and within it from a single bota of markedly greater age and character. The sweetness dates from a blending with top-quality Pedro Ximénez carried out when the solera was laid down, probably more than a century ago. The base is oloroso from Palomino, aged oxidatively without flor. Long ageing has brought the raciness of a dry oloroso and the mellowness of fine PX into balance.\u003c\/p\u003e\n\u003cp\u003eServe lightly chilled at around 12°C in a small glass, in modest measures.
