Pedro Ximénez grapes are sun-dried to raisins before pressing, and the resulting intensely sweet must is fortified before fermentation can take hold, then aged oxidatively through a solera. Here the average age is at least twenty and probably closer to twenty-five years, as the solera system makes precision impossible. The source, identified as Solera Pedro Ximénez NO, had never been bottled before 2016.
