Equis is the label of Maxime Graillot and Thomas Schmittel, run alongside Domaine des Lises. The fruit comes from a mature, organically farmed site owned and managed by a friend and neighbour of the Graillot family, and grower and winemaker work closely on it. Here the grapes were entirely destemmed and fermented in concrete tanks and large wooden tronconique vats with a degree of carbonic maceration, then matured for nine months in the same vessels. The short maceration is what keeps the wine light on its feet.\u003c\/p\u003e\n\u003cp\u003eMade for drinking now and over the next three to four years.
