Vines root into fissured rock that drains hard and holds yields down, and the wines are typically firm, saline and slow to show themselves. Bodet learned the appellation as assistant winemaker at Clos Rougeard, the Saumur-Champigny estate that set the modern benchmark for the area, before bottling under his own name.
