It is among the latest-ripening appellations of the Côte de Beaune, and its whites are correspondingly taut, with cutting acidity and a chalky, almost saline finish rather than the breadth of Meursault. Fabien Coche is based in Meursault and works parcels through these upper valleys; the domaine's approach is consistent across the range, with whole-bunch pressing, barrel fermentation, restrained new oak and extended ageing on fine lees to build texture without obscuring the site.
