The father and son work out of Denmark, on the state's far south coast, with Mike in the cellar and Callum looking after the vines. Free-run juice is cool-fermented in tank. The pressings go into old French barriques, which lends a little texture without any oak flavour.\u003c\/p\u003e\n\u003cp\u003eLemon rind, lime leaf and pink grapefruit come through first, over a chalky minerality and a faint bitter twist like quinine. The finish is long and dry, and while young the wine can feel almost spritzy.
