Whole bunches go straight to the press, the juice settles for a few hours, and wild yeasts carry the fermentation in steel with a small share in neutral oak. It then sits quietly on its lees until the end of February before bottling.\u003c\/p\u003e\n\u003cp\u003eCitrus leads, with a flinty mineral streak and enough weight through the middle to hold its own at the table.
