Granite soils and two streams running below the surface hold the temperature down when the summer turns fierce. Fruit arrives between three and four in the morning and goes directly to the press; roughly 40 per cent ferments in old barrels, the rest under temperature control in steel, and the wine spends twelve months on primary lees without stirring. Just 1,955 bottles were filled.\u003c\/p\u003e\n\u003cp\u003eGrapefruit and white peach arrive first, trailed by a smoky gunpowder note and a broad, almost oily texture.
