The gravelly, ironstone-rich soils and long, cool ripening season allow Cabernet to build flavour while keeping its freshness. The 2023 is described as dark and saturated, with blackberry, cherry, violets and a hint of vanilla pod, followed by a long, deeply flavoured palate and fine tannins carrying an ironstone and graphite line.\u003c\/p\u003e\n\u003cp\u003eGive it an hour in a decanter, then serve at around 17 degrees with slow-roasted lamb shoulder, venison or a rib-eye.
