The vines grow at 220 to 240 metres on ironstone gravel formed from ancient granite and gneiss, with afternoon breezes from the Southern Ocean and a long, mild growing season. Many of the vines are old and dry-grown, farmed with organic and regenerative methods that include cover crops, compost and grazing livestock. Cabernet Malbec is a recent addition to the range, pairing the structure of Cabernet Sauvignon with the dark fruit and plush texture of Malbec from separate estate parcels.\u003c\/p\u003e\n\u003cp\u003eServe at around 16 to 18 degrees with chargrilled lamb cutlets, beef short ribs or a mushroom and lentil pie.
