The Highbury Fields range is the estate's more approachable tier, made for drinking young while still showing regional character. Cabernet from this part of the state tends to pair ripe dark fruit with herbs and fine tannins. The supplier notes plum, cassis and dried herb aromas, with blackberry, mulberry, dark chocolate and cedar on the palate and a line of fine tannin giving length.\u003c\/p\u003e\n\u003cp\u003eOpen it with a steak, lamb cutlets or a Sunday roast, at around 16 to 18 degrees.
