Its early success encouraged others to follow, and the region is now known for structured, long-lived Cabernet and Riesling. The Highbury Fields name comes from a property first settled in the 1840s and farmed for generations for fruit, dairy, grain and livestock, where vines are now dry-grown on the best soils. The winery and cellar door are at Denmark, on the south coast.\u003c\/p\u003e\n\u003cp\u003eServe at around 16 to 18 degrees with roast lamb, a slow-cooked beef ragu or aged cheddar.
