That natural amphitheatre traps warmth and shields the vines from wind, which is why this stretch of coast can ripen Cabernet Sauvignon, something few Tasmanian sites manage. Cabernet Sauvignon is joined by Merlot and Cabernet Franc, and the wine spent an extended period maturing in French oak barriques. The 2019 is deep ruby with cassis, plum, liquorice and black olive, framed by savoury oak and fine, silty tannins, and it is built for a long life in the cellar.\u003c\/p\u003e\n\u003cp\u003eOpen it at around 16 to 18 degrees and give it an hour in a decanter.
