Chardonnay and Pinot Noir from the family's east coast vineyard undergo a second fermentation in bottle and then rest on their lees for an extended period, which builds brioche, toasted almond and creamy, yeasty depth. Tasmania's cool climate supplies the fine acidity that gives the style its length, with grapefruit, white nectarine and local kunzea honey running through the palate and fine, energetic bubbles.\u003c\/p\u003e\n\u003cp\u003eServe well chilled, in a white wine glass or a tulip flute.
