Fritz Haag farms old, largely ungrafted vines here and picks in successive passes, reserving the lightest and most delicate musts for Kabinett. The juice ferments slowly and cool in stainless steel with ambient yeasts, and fermentation is arrested while 45 grams per litre of sugar remain, giving a wine of very modest alcohol in which sweetness is carried by high slate-driven acidity rather than weight.
