Fritz Haag harvests here in several passes, setting aside botrytis-influenced and shrivelled berries for Auslese. Pressing is gentle and whole-bunch, fermentation slow and cool in stainless steel and old Fuder casks, and the wine is arrested at roughly 91 grams per litre of residual sugar.
