The Haag family has held parcels here since 1605 and works them by hand, with old vines, low yields and selective picking. For the Grosses Gewächs the must is fermented with ambient yeasts in stainless steel and traditional Fuder cask, then left on full lees through the winter and bottled dry at 4 grams per litre of residual sugar.
