This bottling draws on younger vines and declassified parcels from those steep, south-facing slopes of grey and blue Devonian slate, which store heat and ripen Riesling slowly at low alcohol. The fruit is pressed gently, settled and fermented cool in stainless steel, and the fermentation is allowed to stop with 17 grams per litre of sugar remaining, the gently off-dry feinherb style.
