Barney Flanders is clear about why, since the stems from this particular vineyard will roll straight over the fruit, which is not the case at his flagship Merricks site. Maturation was in 300-litre hogsheads, around a quarter of them new, with ten months on lees before bottling unfined and unfiltered. Hogsheads at that size give a little more oxygen contact than a puncheon without the oak taking over.\u003c\/p\u003e\n\u003cp\u003eDark cherry, bramble and a fine, grainy tannin, with the savoury mineral edge this vineyard tends to give. Decant it and serve at 15 to 16 degrees.
