The Rathjen family have farmed it since the 1850s and keep yields low across the property, which is why the parcel comes to only a couple of tonnes. Picking at 12 to 12.5 per cent potential alcohol is a deliberate choice, because the aim across this range is fine mouthfeel with freshness intact, not weight. Pressing as whole bunches into seasoned 500-litre puncheons is all the winemaking it gets.\u003c\/p\u003e\n\u003cp\u003eDelicate and perfumed, with white flowers, nectarine and a salty, textural finish that keeps calling for another sip. Serve at 11 degrees.
