After sorting twice, fermentation began naturally with whole berries and ten per cent whole bunch; the fruit stayed twenty-one days on skins with gentle pump-overs and some plunging late on. Eight months on gross lees was divided between 300-litre hogsheads and foudre, at five per cent new oak, then bottling unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eBright red fruits and brown spice, with a sappy stem lift, soft round tannin and a long savoury finish. Fifteen degrees, with half an hour in the glass.
