Most of the crop goes to press as bunches and into old puncheons with full solids, where it stays on lees, while a tenth of the blend ferments carbonically for three weeks. That second parcel is the interesting one: it supplies spice, a flash of red fruit, the blush of colour and the fine-boned structure. Whole-bunch pressing handles the rest, capturing stone fruit and floral perfume.\u003c\/p\u003e\n\u003cp\u003ePure-fruited, perfumed and savoury, with waves of nashi pear and citrus, a spicy undertow and a nippy texture that makes the glass empty fast.
