Ninety per cent of the fruit from these 28-year-old vines is pressed as bunches into old puncheons and left on full solids and lees; the balance ferments carbonically for three weeks and comes back into the blend carrying spice, tannin and a faint blush. The soils, grey loam over red ferrosol, are the same ones that give the Merricks Chardonnay and Pinot Noir their cool, chalky character. In Barney Flanders's hands this variety consistently delivers something with structure and drive, which is not the Gris norm.\u003c\/p\u003e\n\u003cp\u003eNashi pear, white peach and a lick of ginger spice, dry through the middle with a faintly grippy, mouthwatering close. Serve at 10 to 11 degrees.
