Three north-facing rows of vines over 30 years old, planted in the sandy grey loams of Tuerong, produce the whole crop. Fruit was hand-harvested and whole-bunch pressed into a single old 500-litre puncheon for fermentation, followed by nine months on its large, soft lees. There is always an aniseed thread through the finished wine, sitting alongside the saline and mineral notes that mark this site out.\u003c\/p\u003e\n\u003cp\u003eDelicate aromatics of citrus, saline minerals and green mango lead to a direct, linear palate, balanced in weight, tension and phenolic grip. Drink it at 9 to 10 degrees.
