The fruit was hand-harvested and hand-sorted, pressed as whole bunches, then fermented naturally on a heavy solids load in 500-litre François Frères puncheons, a fifth of the wood new. A little of it went through malolactic conversion of its own accord before ten months on full gross lees, with no stirring at any point.\u003c\/p\u003e\n\u003cp\u003eGrapefruit and white peach with a saline, leesy undertone and a thread of smoke.
