It is the first site picked each vintage, sometimes two weeks before Merricks, which is a useful reminder of what aspect does on the Peninsula. Fruit was hand-harvested, hand-sorted and pressed as whole bunches before a natural ferment on high solids in 500-litre puncheons from François Frères, a quarter of them new. A portion completed malolactic conversion naturally, then the wine spent nine months on full gross lees with no bâtonnage.\u003c\/p\u003e\n\u003cp\u003eLemon curd, white flowers and a struck-match lift, then a palate that is generous in the middle and cut fine at the edges.
