The Arnold family run the property, with Justin Arnold making the wines on site. The cool maritime climate and long, mild ripening season give fruit with natural acidity and fine structure, well suited to the classic cool-climate varieties. Tasmania has become Australia's leading source of fine sparkling wine, and this cuvée follows the Champagne model: a blend of 80% Chardonnay and 20% Pinot Noir, fermented a second time in bottle and rested for 30 months on its lees before disgorgement.
