Giant Steps was founded at Healesville in 1997 and now bottles each of its vineyards separately. The fruit is whole-bunch pressed, fermented with wild yeast in French oak, and matured on lees with minimal new wood.\u003c\/p\u003e\u003cp\u003eServe at 12 degrees with oysters, white fish or a simple roast chicken.
