The vines are more than thirty years old, the fruit is fermented with 100 per cent whole bunches, and the wine is aged in demi-muids. Keeping every stem in the ferment adds aromatic lift, a savoury edge and a finer tannic frame, while the demi-muid, at 600 litres roughly double the size of a barrique, gives slow oxygenation with far less oak flavour than a small new barrel.
