Cantina Girlan has been based there since 1923 and farms these mineral-rich slopes at 450 to 500 metres, where the diurnal swing between warm days and cold alpine nights preserves acidity. The fruit is hand-picked, the juice ferments in tank, and only about ten per cent of the wine goes through malolactic conversion, just enough to put a little flesh on the wine's cool bones without softening it. There is no oak. Weight and texture are the strength here: a racy, pulpy white with pithy minerality and an alpine tang on the finish, and one of the better-value bottles in the region.\u003c\/p\u003e\n\u003cp\u003eAt its best over the next three to four years.
