Its defining choice is to block malolactic fermentation, keeping malic acidity intact so the wines stay taut and reward long cellaring. Celebris is the prestige cuvee of the house, declared only in exceptional years and drawn from a small selection of the finest crus. It is bottled extra brut, with a dosage low enough that the wine has nowhere to hide, and given an extended rest on lees in the chalk cellars well beyond the three year minimum for vintage Champagne, before late disgorgement. That combination of low dosage and long ageing is what allows Celebris to be released mature and still taste tight.
