Grand Blanc de Blancs is made entirely from Chardonnay, drawn principally from the chalk villages of the Cote des Blancs together with fruit from the Montagne de Reims and the Sezannais, which broadens the palate rather than leaving it purely linear. Chardonnay on Champagne chalk gives citrus, white flower and a saline, mineral length, and the blocked malolactic fermentation preserves the malic acidity that gives this cuvee its cut. It is aged on lees in the cellars well beyond the legal minimum and finished with a low dosage.
