Grégoire Hoppenot arrived in Fleurie in 2018 after a career in the wine trade and has built a small domaine quickly. His Corcelette parcel is thirty-five years old, on a 30 per cent gradient with a south to south-west orientation, and the soils are stony and shallow with granite scattered throughout. Vine density runs to 10,000 plants per hectare, which gives some sense of what harvest involves on that slope. The fruit spends fifteen days fermenting as whole bunches with ambient yeasts in sixty-hectolitre concrete vats. The wine then rests eight months in a combination of large oak foudre and mature Burgundian barrels that have already seen five vintages, so the wood is a vessel rather than a flavour.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth holding five to eight years.
