Grosset has worked with the valley since 1984. The wine is whole-bunch pressed, fermented with wild yeast in French barriques and matured on lees, with malolactic fermentation used sparingly to keep the acidity taut.\u003c\/p\u003e\u003cp\u003eServe at 12 degrees with crab, roast chicken or a gruyère tart.
