Guffens-Heynen has been based in the commune since 1979 and treats its Mâcon parcels with the same discipline as the Pouilly-Fuissé ones: severely restricted yields, hand picking at full ripeness, slow whole-bunch pressing, fermentation with wild yeasts and ageing in barrel, with no fining or filtration before bottling.
