Warm days and cool nights give Shiraz colour, ripe fruit and fresh acidity, somewhere between the lighter Canberra style and the richer reds of warmer regions. Winemaker Matt Burton works from a Hunter Valley cellar door and a second base in the Canberra District, which lets him compare how Shiraz behaves from site to site.\u003c\/p\u003e\n\u003cp\u003eDark fruit and spice over fine-grained tannins.
