Head came to wine through a biochemistry degree and a decade in the Sydney trade before founding the label in 2006, after vintages at Tyrrell's and Torbreck. The wine is matured mainly in older French hogsheads and bottled unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eServe at 16 degrees with lamb, duck or grilled vegetables.
