Henriques \u0026amp; Henriques, one of the island's largest vineyard owners, age their 15 Year Old range at purpose-built lodges in Câmara de Lobos using the canteiro process rather than the heated estufa: casks are stacked against south-facing windows and left for at least three years in the gentler natural warmth of the sun, so maturation proceeds slowly and the wine develops its oxidative character without being cooked. The result is a brilliant amber wine with golden lights, aromatic and clearly showing its age, full-bodied and complex with dried fruit through the palate.
