The entry-level range is predominantly Tinta Negra, with 10 to 20 per cent of Sercial, Verdelho or Malvasia depending on the age and style. These wines are heated by a controlled estufa process, warming slowly to 45 degrees and then cooling again over about 90 days, which gives the cooked, caramelised character particular to madeira before the wine goes to cask.
