Henriques \u0026amp; Henriques, based at Câmara de Lobos, produce their three-year-old blends through an estufa process set up specifically for these wines, after which they spend three years in oak cask before bottling. Monte Seco is the driest wine in the range, its base of Tinta Negra sharpened by a small proportion of Sercial, the island's most bracing noble white. The style is deliberately pale and light rather than concentrated, made for drinking cold and in quantity rather than sipping after dinner, and it holds up well as a mixer.
