The blend follows the southern Rhône model that suits the valley's warm, dry growing season, where Grenache and Mataro have grown alongside Shiraz since the nineteenth century. Henschke has farmed at Keyneton since 1868, now under the fifth generation, Stephen and Prue Henschke, with soil work and composting in the vineyards. The varieties are fermented separately and matured mostly in older French oak hogsheads, so the fruit carries the wine rather than the wood.\u003c\/p\u003e\u003cp\u003eServe at 16 degrees with slow-cooked lamb, sausages or a vegetable tagine.
