Fruit is hand-picked, fermented in open vessels with the cap plunged by hand, and matured in French oak hogsheads, with a portion new.\u003c\/p\u003e\u003cp\u003eDecant and serve at 17 degrees with roast lamb, aged beef or a hard washed cheese.
