Franco d'Anna put about 15 per cent whole bunches into the ferment, and beyond that the handling matches the estate Pinot Noir exactly. The stems refine the tannins and give the wine a frame to age on. Eighteen months in cask, then bottled with no filtration, fining or stabilisation.\u003c\/p\u003e\n\u003cp\u003eRed cherry, rhubarb and a sappy, peppery spice, with tannins that are fine and drying in a good way. Serve at 15 degrees, decanted briefly.
