The original Pinot Blanc went in at Hoddles Creek in 1997, and growing it was a learning curve for Franco d'Anna, who waited until 2006 before planting a second block across the road and until 2008 before bottling the variety on its own. It has been something of a cult item since. The cellar work is plain: picked and chilled overnight, destemmed and pressed to tank, then fermented warm, between 25 and 27 degrees, specifically to keep overt tropical characters out of the wine. A short spell on lees follows, and it goes to bottle with no additions.\u003c\/p\u003e\n\u003cp\u003ePear, green apple and almond skin, dry and quietly textural, with a clean, faintly bitter finish that makes it a good aperitif. Serve at 10 degrees.
