Demi-sec is the house's middle style, with enough residual sugar to fill out the palate but far from a dessert wine, and it is the level that traditionally ages longest of all. Noël Pinguet, who ran the cellar for decades and moved the estate to biodynamics, regarded 1996 as a great and thoroughly classical year for Huet. This bottling was released from the domaine's cellars in December 2022, so its provenance is unusually secure. At a quarter of a century old the wine is only now coming into its own: refined, aged Chenin with the acidity still driving it.\u003c\/p\u003e\n\u003cp\u003eDrinking now and in no hurry.
